What you’ll be doing

• Supervise daily commissary operations, including receiving, production, packing, and dispatch.
• Receive and verify all deliveries (chicken, sauces, breading, oil, mayo, cheese, flavors, and packaging).
• Check actual quantity and weight against delivery receipts and purchase orders.
• Record discrepancies and report them immediately to the Commissary Head.
• Encode and file all Delivery Receipts (DRs), Purchase Requests (PRs), and Invoices properly.
• Maintain accurate stock cards and digital inventory logs.
• Implement FIFO (First-In, First-Out) and monitor product expiry dates.
• Conduct daily and weekly physical counts and reconcile with records.
• Track daily ingredient usage per batch and maintain yield reports.
• Record and report all spoilage, wastage, and variances.
• Compute weekly food cost and cost of goods sold (COGS) per item and per batch.
• Update product costing sheets based on ingredient price changes.
• Work closely with the Commissary Head to analyze material usage and detect losses.
• Prepare weekly reports including Inventory Summary, Food Cost Report, and Variance Report.
• Coordinate with Commissary, Dispatch, and Accounting teams for stock and documentation flow.
• Ensure all reports and receipts are submitted every Friday to Accounting.
• Maintain cleanliness and order in storage, receiving, and documentation areas.
• Ensure temperature compliance: 0–4°C (chiller), -18°C (freezer), £25°C (dry goods).
• Follow NMIS, DOH, and LGU standards for food storage and handling.
• Supervise and train commissary staff to ensure consistent performance and adherence to SOPs.
• Plan production schedules and ensure timely supply of materials to all branches.

What We’re Looking For

• College graduate in Food Technology, Business Management, or a related field.
• At least 2–3 years of experience in commissary, kitchen, or food production management.
• Strong leadership, analytical, and problem-solving skills. Proficient in MS Office, Google Sheets, and inventory management systems.
• In-depth knowledge of food safety, handling, and sanitation practices.
• Excellent organizational and communication skills.
• Ability to multitask and work efficiently in a fast-paced environment.
• Willing to work on shifting schedules, weekends, and holidays.
• Reliable, detail-oriented, and results-driven.
